Chop an onion, 1 clove of garlic, 2 tomatoes, 2 peppers. Mix with one (drained!) can of mixed beans; add a bit of olive oil, a bit of lime (or lemon) juice; paprika, salt & pepper, a pinch of chilli powder and a bit of ground coriander. Mix together and leave to rest for a couple of hours. Eat as is with nice bread, in pita bread or heated with e.g. rice.
You can use other spices, I sometimes use a bit of Mexican spice mix. If I use that, I like to heat the bean salad and eat it between two slices of bread. A bit messy, but still very yummy!
